Don Domingo could send his finest lots anywhere in the world. He reserves them for Finca 2 Casa instead. There is only ever so much, and when a lot is gone, it is gone until the next picking.

About this roast: The Geisha is one of the most delicate coffees in the world, and everything about it lives in the roast. The roast lives in seconds. The right machine, the exact charge weight, a curve Domingo has spent years learning by feel. A few seconds too long and the florals scorch, the citrus flattens, and the softness is gone for good. There are no second chances and no roast options here, only the one right roast, and the discipline to land it batch after batch, harvest after harvest. Trust the master.
Some coffees are grown. This one was dared into existence. When Domingo planted Geisha at Finca El Roble, everyone told him not to: his neighbours, the local authorities, even the coffee federation's own advisors. Geisha is fragile, vulnerable to leaf rust, and unprotected. But Domingo had done his homework. Above 1,800 metres, rust barely takes hold, and his farm sits at 1,920. "Thank you for the warning," he told them, "but the little farm is mine, and I will see this through." He cleared the stones by hand and planted anyway. When the first harvest reached the lab, the verdict came back: the cherries were early, but the coffee was exceptional. Judges have said the same ever since, first place, year after year.
