Grown at 1,920 metres in the Colombian Andes and harvested by hand. Roasted by Domingo and his family to the single profile that suits it best, then flown fresh from the farm to your door.
The Castillo does not shout, it whispers. Sweet caramel, a whisper of almond, and a lingering wine-like finish that stays with you long after the last sip. Clean, honest, beautifully grown coffee with nothing to hide behind.
Domingo's harvest is small, and he reserves it for Finca 2 Casa. There is only ever so much, and when a lot is gone, it is gone until the next picking.

None of this is luck. The cherries are picked only when perfectly ripe, floated, washed, and dried with care, then roasted to land the same sweet, caramel cup every single time. That kind of consistency, harvest after harvest, is the hardest thing in coffee, and the reason a hillside of stones became a record-setting national champion.
