How to honour it
Take your time.

Grind just before you brew. Whole beans keep their aroma. The moment you grind, the clock starts, so grind only what you need.

Water just off the boil. Not boiling. Give the kettle thirty seconds to settle before you pour.

Pour slowly, drink slower. This is not a coffee to gulp on the way out. Sit with it. It rewards patience.
